I originally wanted to write a cookbook for other people who had a TBI to write down healthy recipes for the brain, metabolism, and to show them how to eat healthy. In school, we are so focused on how to do math, science, and social studies that they don't teach you how to eat correctly. People should definitely consult with their doctors first and take in consideration what they are allergic to, but this hopefully will help with the TBI healing process. I have included recipes for overnight oats, tofu scrambled eggs, paleo pancakes, energy balls, shakes, turkey tacos, grilled salmon, vegetarian chili, and more. I will probably end up working on this book for the next two years or so. I want it to be great and have about 40 to 50 recipes in there. But, they all need to be healthy and good for the brain for me to include them.
